With lots of people staying at home due to the coronavirus outbreak, there’s more time for breakfast. How about making some pancakes?
Standard pancakes need ingredients like flour and milk that you might struggle to find right now.
But these pancakes need just two ingredients and they don’t contain any flour. All you need is a banana and some eggs.
They’re perfect for using up bananas that are a little past their best (like for banana bread) and they are really quick and easy.
Simply mash one banana, add two eggs and beat it all together and fry and flip them as usual. It makes about five to seven pancakes so scale it up if you are feeding a few people.
You can add a pinch of baking powder to make them fluffier but it’s not necessary.
If you have a blender (or smoothie maker) you can give the batter a quick wizz in there to make it smoother but again it’s not essential.
The batter is a little more fragile than a normal pancake mix so don’t turn the heat up too high and wait until the bubbles pop to gently flip them over. Don’t move them around too much or they will break apart.
Of course, the finished pancakes have a slightly different texture and taste because of the fruit but they are healthier and still delicious.
Add maple syrup or your favourite toppings for a real treat.
If you have a waffle maker, you can also add the mix to that to create waffles instead.
