Pumpkin spice cupcakes recipe is perfect for Halloween or a cosy autumn night

There is nothing better than something sweet in Autumn, especially with Halloween around the corner, and what better way to celebrate this spooky holiday than by making some pumpkin-inspired cupcakes.

These pumpkin spice cupcakes have been inspired by the famous Starbucks latte of the same name, made with a variety of autumn spices, plus topped with vanilla chai buttercream.

This delicious recipe was created by baker Madison Eberhardt, who has become very popular online due to her beautiful autumn treats which she posts on her TikTok account @mmatildabakes and website mmatildabakes.

Madison has said these cupcakes are best made to warm you up during the chilly autumn weather. She said: “These cupcakes are inspired by a pumpkin spice latte because of the intense fall spices and pumpkin puree incorporated into the batter, but also the chai spiced buttercream as well.

!Chai spice is easy to make at home with spices you may already have in your cupboard or through a tea bag. By combining pumpkin puree and chai spice into your cupcake, each bite will feel like a sip of your favourite fall latte! Making this recipe a great one to make on a cold day or if you want a nostalgic taste of autumn.”

How to make pumpkin spice cupcakes 

Ingredients

To make the cupcakes:

  • 1.5 cups of pumpkin puree (240g)
  • One tablespoon of vanilla extract
  • Two room-temperature eggs
  • ¾ cups of brown sugar (150g)
  • 1.5 cups of all-purpose flour (190g)
  • ¼ tablespoons of salt
  • ½ tablespoons of baking soda
  • 1 ¼ tablespoons of baking powder
  • ⅓ cups of sugar (80g)

To make the chai spice:

  • Four tablespoons of cinnamon
  • Two tablespoons of ginger
  • One tablespoon of cardamon
  • ½ tablespoons of nutmeg,
  • ½ Allspice
  • ½ Clove
  • ⅛ tablespoons of black pepper (use half for the batter and half for buttercream)

How to make the buttercream:

  • ½ cup of room-temperature unsalted butter (113g)
  • Four tablespoons of heavy cream
  • Three cups of powdered sugar
  • Chai spice
  • Pinch of salt

Decoration:

  • Orange sprinkles
  • Halloween sprinkles

Kitchen equipment:

  • Small bowl
  • Mixing bowl
  • Another mixing bowl
  • Strainer (or sieve)
  • Muffin pan

Instructions 

To begin, make your chai spice. Combine all the spices in a small bowl and mix together.

Next, time to make the cupcakes. Take a mixing bowl, combine the pumpkin puree, vanilla extract, eggs and brown sugar and mix together.

Then, use a sieve to also sift the flour into the mixing bowl, and then add the baking powder, baking soda, salt and chai spice. Mix well until combined.

Place the mixture into a muffin pan and bake at 180C (350F) for around 20 to 25 minutes until they come out looking golden. Take out in the oven and leave to cool in the muffin pan.

To make the buttercream, whisk all the ingredients together in a mixing bowl and around five minutes until you have a light and fluffy batter. Once ready, leave to chill in the fridge for around 15 minutes.

Once the buttercream is ready, place it on top of your cooled cupcakes and then decorate with Halloween sprinkles. Your delicious pumpkin-spiced cupcakes are now ready to eat.
