It’s 2006. The Real Housewives of Orange County premieres on Bravo. Nintendo releases the Wii gaming console. And quinoa’s at the start of its rise in popularity — one that would last for seven years, culminating with the Food and Agriculture Organization of the United Nations naming 2013 “The International Year of Quinoa.” These days, we don’t hear as much about the protein-packed seed, but that doesn’t mean high-caliber, celebrity chefs, like Giada De Laurentiis, have ceased using the pseudo-cereal grain. In fact, the Foot Network host just shared an unlikely recipe starring quinoa: quinoa pancakes.
De Laurentiis’ gluten-free quinoa pancakes have got to be the lightest, fluffiest stack of ‘cakes we’ve seen yet. And even better, they have all the protein you’ll ever need to start the day off right.
This beginner-level recipe takes less than 30 minutes to make, including the 10-minute prep time and 15-minute cook time. With each serving making 15 pancakes, the quinoa pancakes recipe calls for just nine ingredients, most of which you likely already have at home. Ingredients include white rice flour or gluten-free oat flour, baking powder, baking soda, kosher salt, room temperature buttermilk, eggs, pure vanilla extract, pure maple syrup, and cooked quinoa. Add blueberries to your shopping list if you want to add them to the pancake mix or scatter atop.
De Laurentiis shared the quinoa pancakes on her Instagram this week, captioning the mouthwatering image, “Quinoa in pancakes? Surprisingly amazing. And #glutenfree!”
Since, De Laurentiis shared two more healthy recipes: Italian chicken lettuce wraps (that make for “the perfect make-ahead meal prep,” she writes) and a pesto salad dressing. All recipes can be found on her lifestyle platform, Giadzy, which she launched in 2016.
