Five-minute breakfast burrito recipe is perfect for weight loss

Those looking to improve their health or lose weight should start as they mean to go on with a nourishing breakfast at the start of the day.

A breakfast burrito is a great – and delicious – way to pack in plenty of protein and veggies into your diet.

If you’re after something simple but healthy to kick off the week, BBC Good Food’s breakfast burrito might be the perfect choice.

Cookery writer Sophie Godwin’s two step recipe takes just five minutes to prepare and 10 minutes to cook.

The recipe is incredibly “easy” according to BBC Good Food, so it’s ideal for those who want to whip up something quick and uncomplex in the morning.

Sophie advised: “Fill a nutritious wholemeal wrap with lots of healthy breakfast ingredients to make this veggie burrito. We’ve included protein-rich eggs and avocado to add good fats.”

The wrap (which serves one person) contains just 366 calories.

If you want to change up the recipe by adding other ingredients you already have at home, grab some sweet or red potatoes, sweetcorn, peppers, spinach, or chicken breast.

Ingredients

  • One tsp chipotle paste
  • One egg
  • One tsp rapeseed oil
  • 50g kale
  • Seven cherry tomatoes, halved
  • Half a small avocado, sliced
  • One wholemeal tortilla wrap, warmed

Method

1. In a jug, whisk the chipotle paste with the egg and some seasoning. Heat the oil in a large frying pan. Then, add the kale and tomatoes.

2. Cook in the pan until the kale has wilted and the tomatoes have softened. Push all of it to one side of the pan. Pour the beaten egg into the cleared half of the pan and make scrambled eggs. Remove the contents of the pan and add everything into the centre of your wrap in layers, finishing it off with some sliced or mashed avocado. Wrap it up carefully so the contents doesn’t all fall out, and enjoy right away.
