Who doesn’t love ice cream? This delicious treat is even better when smushed between two slabs of the wafer, or in this case shortbread. Express.co.uk reveals Walker’s ice cream sandwich recipe in honour of National Ice Cream month so you can stay nice and cool during the heatwave.

You need:

  • Walker’s Chocolate chip Shortbreads
  • Ice cream (any flavour)
  • Decorations (sprinkles, chopped nuts, dried berries, flaked chocolate, melted chocolate)

Method

Step one

Soften the ice cream slightly by taking it out of the fridge for five minutes before scooping.

Step two

Pour the decorations of your choice into shallow bowls suitable for dipping and rolling your sandwich edges.

Step three

With an ice cream scoop, scoop out a ball of ice cream and sandwich it between two shortbread rounds.

Step four

Carefully squish the rounds together and smooth the ice cream around the sides with a palette knife.

Step five

Then roll the edges of the ice cream sandwich in the decoration bowl of your choice.

Step six

Melt chocolate and drizzle over your sandwiches or partially dunk them in chocolate, have some fun and get creative with your decorations!

Step seven

Serve immediately, or pop in the freezer to set further.
