Thank goodness 2020 is finally almost over! With the new year on the horizon, we sure have been looking for some meals that will wow the crowds, yet not break the bank. Ina Garten shared three special, New Year’s Eve-worthy meals with NPR that are totally budget friendly and we cannot wait to make them.
The first she suggested was pasta. “Any kind of pasta is really very reasonably priced to make.” She suggested a pasta arrabbiata or another classic like homemade mac and cheese! “It’s just delicious if you make the real thing not out of a box. You will be really surprised at how incredibly special something like that can be.” We agree with Garten, comfort food is always a fan favorite!
She also suggested one of her easier recipes, Chicken Parmesan. “I do it with parmesan and bread crumbs and just sauté it and serve with a salad with lemon vinaigrette on the top. It’s a very inexpensive meal. It’s one boneless chicken breast that’s been pounded thin and then sautéed and it’s just great!”
The last, but certainly not least, recipe that Garten recommended was one from her new cookbook! “I actually have a recipe in the new book about roasted sausage and peppers and onions and I serve it on polenta . . . polenta is such an easy thing to make you just stir it and serve it, you know, with sausage and peppers on top. That’s a great holiday meal!”
Thanks to Garten, we now won’t be scrambling last minute in attempts to find the perfect recipe. We have three perfect options that are sure to be a New Year’s Eve hit.
