Fred’s Wednesday Wine Club #FWWC Abellio Albariño Rias Baixas I am so excited to share with you this little gem of a wine. It has it all – very well made, fun and joyful to drink and unbelievably great value for money. What a steal! @lidlgb Rías Baixas is a wine area in the Galicia region of Spain. Galicia is located in the northwest of Spain along the Atlantic coast and borders Portugal. The Albariño grape is the region's most famous variety. Following a drive to improve quality by various producers DO (Denominación de Origen) was granted to the region in the late 80’s. As for most wine regions the terroir plays a very important role in Rias Baixas. Indeed the cool influence from the Atlantic Ocean plays to the strength of the Albariño grape and contributes to making the wine crisp and fresh while the area's granite soils give the wine an intense minerality. This particular wine is meant to be drunk when young, fruity and vibrant so make sure you buy to drink it now. I feel so privileged and lucky to drink this wine in lockdown because this is a true local wine at its best. So good in fact that it made me want to visit Galicia. And that would not have happened without the quest for excellence of a few winemakers 30 years ago. This is what quality is about. It makes the world a better place. Colour – pale straw Nose – very fragrant, fruity and floral. Notes of peach, green apple and citrus. Palate – crisp, balanced, refreshing and with a mouth-watering acidity. Notes of stone fruits, honey and a touch of creaminess. The finish is medium. I drank this wine whilst making the most incredible chicken curry risotto. Yes!!!!! chicken curry risotto! Unfortunately, the bottle was finished before the meal started… I gave the wine a 9/10 and received the same score for my risotto so overall a very successful night. Enjoy x

Fred Wednesday Wine Club #FWWC Johnnie Walker Blue Label In the summer of 1988 I was 16 years old and on a work placement following my first year at catering college. For two months I worked at Le Gindreau, a family run restaurant in Saint-Médard Catus (Lot 46). The restaurant was closed one day a week. After the last service was over and all the guests had left, the whole team led by Maître d'hôtel Frédéric (not me, another Fred whom you can read about in my book Secret Service) was going out to party in a "glamorous" local club called Le Look in Cahors. Frédéric was well-liked and well-known. He was like the Messiah there – shaking hands and kissing everyone. I remember going to Le Look for the first time and could not believe where I was and what was happening. Sweet sixteen! That night Frédéric ordered a bottle of Johnnie Walker Black Label and the party started. This was my first time drinking Whisky. After the summer I went back to catering college to resume my studies. Wines and spirits were an important topic and one I always enjoyed. I was a keen learner and quickly developed an appreciation and taste for quality. For me it is not just about what is in the bottle but how it gets there, how it is produced, the story behind it and crucially the many stories, conversations and the laughter that take place when the bottle is opened. Every bottle has a story. Mine is one of friendship. My first JW Blue Label was a present from my generous friend @caggianesemiki . JW Blue Label is one of a kind blended Whisky. It is rich, slightly peaty and very smooth. The story goes that back in the day Johnnie Walker who was selling whiskies in his Kilmarnock shop in 1820 used to create a quality blend for his customers. Since then Johnnie Walker have simply continued that quest for excellence with the Blue label. Nose – mellow, smooth, round, smoky and very attractive sweet raisin notes. Palate – complex and balanced. Notes of wood, vanilla and honeyed smokiness. Finish – it has that taste of reviens-y. Delicious. I like to drink mine neat like a true ??? Enjoy and as we say in France – à consommer avec modération x .

Fred's Wednesday Wine Club #FWWC Masi Costasera Amarone della Valpolicella Classico 1997 Masi Agricola is a wine producer from Veneto in northern Italy. It made its name producing Valpolicella wines and is particularly famous for its Amarone. The grapes variety used are Corvina, Rondinella, Molinara. When vinified together by experts such as Masi they make one of the finest and smoothest wines in the World. The exact proportions used is up to each winery. Corvina is the main grape. It brings acidity and a sour-cherry flavour. It is light in colour and is therefore often compared to the (light) Gamay variety of Beaujolais. Rondinella is used to add colour and body to the blend. It brings herbal notes and enhances the spiciness of the Corvina. As for Molinara it complements the wine with extra tannins and a lively and fresh acidity. What makes this wine different and very special is the appassimento technique. This natural and organic process dehydrates the grapes and produces a greater concentration of colours, aromas and flavours in the wine. Because the grapes are partially dried they also have a higher concentration of sugars. After picking, the grapes are laid out on bamboo racks in special drying rooms (fruttai) for more than 100 days. During this time they lose 30-40% of their weight. The maceration and fermentation processes continue for 45-50 days, and the wine produced is left to age for at least three years in wood before bottling. The 1997 was so good. So smooth, #fruitcake called it "Incredible!" Colour -very dark ruby red. Nose – this wine smells like the most seductive perfume. Notes of baked fruits, plums and cherries, chocolate, and very smooth oak. Palate – bold, soft, very well balanced, full of delicate favours with notes of fruits, coffee, leather and tobacco. Excellent before, during and after-dinner. I had this with my award winning Curry (goat) lamb with fresh tagliatelle. It worked so well! Serve the wine at 18/20C and be careful this is a bomb at 15% Available from the fine wine section @cafe_amisha Enjoy x

Fred's Wednesday Wine Club #FWWC Fleurie 2018 Marks & Spencer Fleurie is a one of the best known Beaujolais and part of the wider Burgundy wine region. In contrast to most other red wines produced there, Beaujolais are made exclusively with the Gamay grape variety. Wine making in the region has a long history dating back to the Middle Ages. In 1930 Fleurie was granted the prestigious AOC or appellation d'origine contrôlée. This is basically a French quality stamp that ensures the wines produced meet all the agreed quality standards. This is why it is good to know how to read a label when buying wines. All countries differ and have their own rules. For example and as you will discover in the first leg of our journey with Gordon and Gino on @itv at 9pm on the 2nd April, #Mexico has no such stringent rules! The climate in Fleurie is a temperate continental climate. The vineyeard is shielded from the cold by hills while the sun is cooled by the gentle influences from the Mediterranean Sea. This allows for slow and steady ripening which in turns balances the acidity and flavour in the grapes. Perfect conditions if you ask me! The Gamay grape was originally shunned by the ruling Dukes of Burgundy. They did not like or understand it so they tried to outlaw it at first and then only allowed its culture on the granite-based soils in the hills just north of Lyon, a terroir that the grape was much better suited to anyway. Typically Gamay produces light and fruit-driven red wines that are supposed to be drunk when young, fresh and vibrant. As I type I can't help to think of the lyrics from Notorious BIG – Juicy. Gamay is like that too : juicy and fruity. A misunderstood rebel from back in the day who has now become main stream. Another lesson to us all here. Live and let live. Don't judge and #bekind Palate – deep purple Nose – as if closing your eyes and smelling a basket full of ripe and juicy red fruits such as strawberry, raspberry and cherry. Palate – good structure and balance, healthy acidity, very smooth tannin and lots of red fruits. Delicious. Match with roast chicken or pasta. Enjoy drinking it at the table or in bed x

It looks as though Fred also has his very own walk-in wardrobe. Back in February, he shared a post of himself – topless, again – after going for a swim “to ease some back pain”. The room features herringbone flooring and a large wardrobe with a black frame and quilted leather front.

Fred and his fiancée got engaged in March after dating for two years. Fred shared the news on Instagram with a photo of the pair and the caption: “#fruitcake said yes.”
