Cooking with banana skins and retro desserts – top food predictions for 2021

With the nation in the latest lockdown, lots of us are (once again) turning our attention to baking, cooking and comfort food in general.

And a new report by leading chefs is predicting some unlikely foods will be popular over the months to come.

According to experts behind the Young British Food & Drink Awards, we’ll look back to retro foods as well as innovative environmentally-friendly recipes over the next year.

Brace yourselves, it looks like we are in for a wild ride in 2021…

Banana skins

It seems we will be swapping our banana bread recipes from 2020 for those which feature banana skins, according to the YBF report.

With the rise of veganism, banana skins are the latest substitute for pulled pork – so we could be seeing a lot more of them in 2021.

Retro desserts

Nostalgia also plays a key role in the food trends which are expected to be big this year.

Retro desserts such as sticky toffee pudding and cherry pie are on the rise as well as trifles – a pudding which saw an 35% increase in sales at Waitrose last year.

Posh waffles

It’s also expected that waffles will be in the spotlight in 2021, as ‘‘#waffle’ has gained five million likes on Instagram, overtaking other treats.

Sherry

Another old-school tipple due to make a comeback is sherry.

Richard Corrigan Jnr, of Bentley’s Oyster Bar & Grill in Mayfair, told the Daily Mail: ‘Sherry is incredibly versatile. You could have many different types hiding in your house but generally you will have three styles of sherry lurking around: dry sherry (Fino, Manzanilla); Nutty/Richer/Darker sherries (Amontillado, Palo Cortado, Oloroso); and sweet sherries (Pedro Ximenez, Moscatel). 

‘Try pairing sherry with food, this is proving increasingly popular with our guests at Bentley’s. Dry sherries are great with oysters and clams, darker varieties work well with terrines and smoked salmon, and try pairing a sweet sherry with blue cheese.’ 

Mutton

On the meat side of things, mutton is becoming more and more popular as The Grocer reports sales of the meat at Farmison & Co are up by a staggering 465%.

Bottarga

Likewise, bottarga (salted, cured fish roe) is expected to be a trend for 2021. The food is a favourite of Nigella Lawson, who frequently uses it in her latest book Eat, Cook, Repeat.
