Chef Oli Brandon, who shares his cooking videos to TikTok under the username @theptchef, has lifted the lid on how he makes “the best roast potatoes”. The chef revealed that the key to potatoes which are crispy on the outside and fluffy on the inside is adding a teaspoon of baking soda while cooking.

In a video posted to his TikTok page, the chef bit into one of his freshly made potatoes. He described the satisfying crunch as: “The sound of the best roast potatoes you’ve ever had.”

The recipe has been a hit on social media, garnering 536.9K likes so far and has been shared 103.1K times.

In a step-by-step guide, Oli explained: “Put one teaspoon of baking soda and salt into boiling watering cook your potatoes until fork tender but not falling apart.”

When added at this stage, the baking soda breaks down a starch in potatoes called pectin and draws it to the surface. This helps to create a crispy surface and helps the potatoes to become a gorgeous shade of golden brown.

Once the potatoes are fork tender, drain them off and fluff them up. Oli continued: “Next, finely chop rosemary and garlic and add into a pan with lots of olive oil.

“Toast these until lightly golden brown and then drain the oil off all over the potatoes.” You will be left with an array of crunchy rosemary and garlic crumbs.

“Don’t throw them away we will be using it later,” said Oli.

Using the freshly drained oil, Oli spreads a coating over the top of the potatoes before they are baked.

“Make sure you spread that oil all over the potatoes, add salt and pepper and then bake them at 180C for 20 minutes,” he said.

“Turn them over and bake them for another 20 to 30 minutes or until super crispy.”

Finally, transfer your roast pirates into a bowl and add the toasted garlic and rosemary crumbs. Oli recommends adding a pinch of salt at this point too, before mixing all of the ingredients together.

Commenters said they were left “craving” the dish after hearing the sound of Oli bite into his crispy potatoes.

A TikTok user named Emily said: “It’s 11pm and you’ve got me wanting roast potatoes.”

Another user, named Libby, added: “Never craved something so much in my life.”

Cooking enthusiasts who had tried out the recipe for themselves also weighed in with their reviews.

Aleena said: “I made these today and all I can say is that these are the best roast potatoes I’ve ever had in my life and I would definitely recommend.” [SIC]

An anonymous user even went so far as to say the potatoes were better than those cooked by their mum.

They said: “I made these the other day and they were so nice, better than my mum’s and that’s saying something.”
